Bacalhau à Gomes de Sá


Ingredients

500g bacalhau

500g potatoes

3 large onions

2 hard boiled eggs

2 tablespoons chopped parsley

Black olives

Olive oil


Remove salt from the bacalhau, cook, drain, clean and break up gently into large flakes. See recipe Pasteis de Bacalhau on how to do this.

Boil the potatoes with their skins. Then peel them and cut into rings. Chop the onions into rings and fry in a large frying pan, in olive oil until they are slightly golden. Add the bacalhau and the potato rings to the fried onion rings. Gently mix . Add a pepper to taste and the hard boiled eggs also cut into rings.

Garnish with black olives and chopped parsely.
