Arroz Doce - delicious portuguese rice pudding


Ingredients

250 grams arborio style rice

75ml milk

250 grams sugar

4 egg yolks

Long strip of lemon peel

Small cinnamon stick

Ground cinnamon

Boil 500ml water of water in a large saucepan. Add the rice, the strip of lemon peel and the small cinnamon stick. Cook gently until the rice has absorbed almost all the water.

Warm the milk. Remove the cinnamon stick and lemon peel from the pan and gradually add the milk. Allow the rice to cook slowly until it is soft. Do not allow the mixture to become dry. Add a little more milk if necessary.

Then add the sugar and mix in gently and remove the saucepan from the stove. In a small bowl mix the egg yolks with a forlk and then add them very gradually to the rice, stirring all the time so that they are evenly incorporated into the milky rice. Heat the saucepan again just for a couple of minutes while to make sure that the egg yolks are cooked. Sometimes the heat of the milky rice is enough to cook the eggs.

Divide the mixture amongst small serving dishes and decorate with ground cinnamon on top.
