Arroz de Tomate - Tomato Rice


2 cups rice rice

2 tablespoons olive oil

1 small onion

2 cloves garlic

250 grams tomatoes

1 bay leaf

4 cups water

salt and pepper

Place the olive oil in a saucepan. Finely chop the onion and fry it gently togther with the crushed garlic. Remove skins and seeds from the tomotoes and chop. Add to the rice. Boil the water and add to the saucepan. Cover saucepan, reduce heat and allow rice to cook.
